400gr of Whole Wheat Flour
180 gr Water
50 gr Volio EVOO
150 gr Tofu
150 gr Dates
150 gr Walnuts
150 gr Walnuts
Pinch of salt



Start by preparing the dough. In a bowl mix flour, water, Volio EVOO and the pinch of salt. Start working the dough with a spatula, when it becomes difficult place the ingredients on a flat cooking surface and knead the dough until it becomes smooth. Cover it with a dishtowel and let it rest for 15 min.

Move on with the filling. In a food processor chop dates, walnuts and tofu together until it become a paste.

Once the filling is finished move back to the dough and with the help of a rolling pin or a pasta machine create thin dough strips .

With the help of a cup or a cookie cutter cut the dough. With the help of a spoon place the filling on each circle and close it by folding into half and closing the extremities so that the filling doesn’t come out while cooking.



Place in the oven at 180 degrees for 20 minutes.
