Red Garlic of Nubia

6.80 TTC

The Red Garlic of Nubia, typical for the purple-red colour of the tunics of its bulbs, is grown in the dry, dark, clay soil surrounded by salt pans, within the Riserva Naturale Orientata Saline di Trapani and Paceco (WWF) and also in the municipalities of Trapani, Erice, Buseto Palizzolo, Valderice and Marsala.
Sown in late autumn, from December to January, it is harvested between May and June, after the inflorescence, called Spicuna in dialect, has been removed to facilitate the braiding operation. Harvesting takes place during the coolest hours of the day: early in the morning or in the evening, so that the leaves are moist to facilitate the manual work of braiding the bulbs to form the traditional ‘Trizza’.

Interesting Fact:

Produced by the Simonte Organic Farm located in Dattilo in the province of Trapani (Sicily), the Red Garlic of Nubia is a Slow Food Presidia. The Presidia are Slow Food Communities that work every day to save native livestock breeds, local fruit and vegetable varieties, bread, cheeses, cured meats, sweets, and more. They are committed to passing on traditional production techniques and crafts, they care for the environment and they add value to landscapes, places, and cultures.
The Presidia involve thousands of farmers, food artisans, herders, fishers, and winegrowers on all five continents.
